Vegan Challenge Day 4: From B-12 to Protein
Day four! Sounds a bit anti-climatic, but I’m impressed we’re still going strong after four days without animal products. Today, we caught up with 22News Registered Dietitian Nancy Dell to talk about what we might be missing with our plant-based whole foods diet.
She essentially said there are four nutrients we should monitor; Vitamin B-12, protein, calcium and iron. They all can be found in plant foods, except for B-12.

We all weighed each other and had basic cholesterol tests done before we started, but tomorrow (Friday), we’ll be getting our muscle mass tested and a few other things to compare with at the end of the 30 days.
So many people have been asking me if I’m hungry or having withdrawals. I do miss cheese. Bad. EVERYTHING tastes better with cheese. Cheddar, American, Asiago, Parmesan, Gouda, Mozzarella… I could go on. Otherwise, it hasn’t been that bad. Our meals have been filling and we’ve been snacking on fruit and nuts.
Today’s meals were, by far, the best we’ve had so far!
Lunch was a salad (from the grocery store) with edamame, tofu, quinoa, macaroni and a whole bunch of veggies.
Dinner was an AMAZING made-from-scratch soup Kara made.
